{"id":3118,"date":"2020-08-24T12:03:44","date_gmt":"2020-08-24T11:03:44","guid":{"rendered":"https:\/\/ticinoatavola.ch\/?p=3118"},"modified":"2023-08-23T13:00:49","modified_gmt":"2023-08-23T12:00:49","slug":"le-castagne","status":"publish","type":"post","link":"https:\/\/ticinoatavola.ch\/index.php\/2020\/08\/24\/le-castagne\/","title":{"rendered":"Le castagne"},"content":{"rendered":"<div class=\"wpb-content-wrapper\"><p>[vc_row][vc_column][vc_column_text el_class=&#8221;tedesco&#8221;]Il castagno, pianta tipica del sud delle Alpi tra i 200 e i 1\u2019000 m di altitudine, nel passato si \u00e8 meritato l\u2019appellativo di \u201calbero del pane\u201d, perch\u00e9 la castagna, fin dall\u2019Alto Medioevo, era uno degli alimenti principali per le popolazioni del Canton Ticino, grazie a metodi di conservazione che ne garantivano il consumo quasi tutto l\u2019anno.<br \/>\nUno dei pi\u00f9 diffusi era il particolare procedimento per far seccare le castagne: dalle selve castanili erano portate nelle \u201cgr\u00e0\u201d, piccole casupole in pietra a due piani, dove i frutti seccavano lentamente sopra un fuoco che garantiva un calore costante per settimane. La visione romantica di queste lingue di fumo che si alzavano dalle \u201cgr\u00e0\u201d \u00e8 quasi un ricordo, ma rimangono intatti il valore nutritivo e la bont\u00e0 di questo frutto autunnale.<br \/>\nOggi, come allora, sono simili i prodotti che si ricavano dalle castagne, come farine, fiocchi, pane, paste, torte, marmellate, birre. I buongustai apprezzano i marrons glac\u00e9s, le caldarroste, le castagne bollite con la panna o servite come contorno dei piatti di selvaggina e molto altro ancora.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_separator color=&#8221;black&#8221; css=&#8221;.vc_custom_1597237105197{margin-top: 30px !important;margin-bottom: 60px !important;}&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text el_class=&#8221;francese&#8221;]Die Kastanie<br \/>\nDer Kastanienbaum \u2013 eine typische Pflanze der Alpens\u00fcdseite, die auf der H\u00f6he von 200 bis 1\u2019000 Metern w\u00e4chst \u2013 hat sich in der Vergangenheit den Namen \u201cBaum des Brotes\u201d verdient, da die Kastanie seit dem Mittelalter eines der Hauptnahrungsmittel f\u00fcr die Tessiner Bev\u00f6lkerung darstellte. Dies dank der Konservierungsmethoden, die einen Verzehr \u00fcber das ganze Jahr hinweg garantieren konnten. Eine der verbreitetsten dieser Methoden war die Kastanien nach einem speziellen Verfahren zu trocknen; aus den Kastanienw\u00e4ldern wurden sie in die \u201cgr\u00e0\u201d (kleine zweist\u00f6ckige Steinh\u00fctten) gebracht, wo diese Fr\u00fcchte langsam \u00fcber dem Feuer \u2013 das so eine konstante Temperatur garantierte \u2013 trocknen konnten. Das romantische Bild der aufsteigenden Rauchf\u00e4den \u00fcber der \u201cgr\u00e0\u201d ist fast nur noch eine Erinnerung, aber der N\u00e4hrwert und Vorz\u00fcglichkeit dieser Herbstfrucht bleiben unangetastet. Und heute sind es \u00e4hnliche Produkte wie damals, die aus der Kastanie hergestellt werden: Mehl, Flocken, Brot, Teigwaren, Torten, Konfit\u00fcren und Biere. Feinschmecker sch\u00e4tzen besonders die Marron glac\u00e9s, die Marroni, die gekochten Kastanien mit Rahm oder als Beilage zu Wildgerichten usw.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_separator color=&#8221;black&#8221; css=&#8221;.vc_custom_1597237137203{margin-top: 30px !important;margin-bottom: 60px !important;}&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text el_class=&#8221;tedesco&#8221;]La ch\u00e2taigne<br \/>\nLe ch\u00e2taignier, arbre typique du sud des Alpes entre 200 et 1\u2019000 m\u00e8tres d\u2019altitude, s\u2019est par le pass\u00e9 m\u00e9rit\u00e9 le nom d\u2019\u201carbre \u00e0 pain\u201d, parce que la ch\u00e2taigne, depuis le Haut Moyen Age, a \u00e9t\u00e9 un des aliments principaux pour les populations du canton du Tessin, gr\u00e2ce \u00e0 des m\u00e9thodes de conservation qui en garantissaient la consommation presque toute l\u2019ann\u00e9e. Une des plus connues \u00e9tait une proc\u00e9dure particuli\u00e8re pour faire s\u00e9cher les ch\u00e2taignes; des for\u00eats de ch\u00e2taigniers celles-ci \u00e9taient port\u00e9es dans les \u201cgr\u00e0\u201d, petites b\u00e2tisses en pierre \u00e0 deux \u00e9tages o\u00f9 ces fruits s\u00e9chaient lentement sur un feu qui maintenait pour des semaines une chaleur constante. La vision romantique de ces \u00e9charpes de fum\u00e9e qui s\u2019\u00e9levaient des \u201cgr\u00e0\u201d est presque un souvenir, mais restent intactes la valeur nutritive et la bont\u00e9 de ce fruit automnal. Aujourd\u2019hui comme jadis, les produits d\u00e9riv\u00e9s de la ch\u00e2taigne sont les m\u00eames: farine, flocons, pain, p\u00e2tes, g\u00e2teaux, marmelades, bi\u00e8res. Les gourmets appr\u00e9cient les marrons glac\u00e9s, les marrons grill\u00e9s, les ch\u00e2taignes bouillies avec la cr\u00e8me ou servies comme accompagnement de la chasse, et beaucoup plus de d\u00e9lices encore.<br \/>\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_separator color=&#8221;black&#8221; css=&#8221;.vc_custom_1597237137203{margin-top: 30px !important;margin-bottom: 60px !important;}&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text el_class=&#8221;tedesco&#8221;]Chestnuts<br \/>\nThe sweet chestnut tree, a common sight in the southern Alps at altitudes of between 200 and 1000 m, was once known as the \u2018bread tree\u2019, since chestnuts were one of the staple foods of Canton Ticino until the early Middle Ages. Various methods were used to preserve the chestnuts, allowing them to be eaten almost all year round.<br \/>\nOne of the most common of these was a unique drying procedure. They were taken from the chestnut forests to a small, two-storey stone building known as a gr\u00e0, where they were dried slowly for several weeks above a fire kept at a constant temperature. The romantic sight of wisps of smoke rising from the gr\u00e0 has all but died out, but the nutritional value and delicious flavour of this autumnal food remain.<br \/>\nToday, the products made from chestnuts are similar to those produced in the past, and include flour, flakes, bread, pasta, cake, jam and beer.
