E proprio laghi e fiumi, oltre ad essere parte integrante del paesaggio ticinese, sono l\u2019habitat ideale per un\u2019incredibile variet\u00e0 di pesci, in passato essenziali per l\u2019alimentazione e l\u2019economia locale.<br \/>\nUn patrimonio che si ritrova nella tradizione culinaria regionale, in grado di valorizzare ogni tipo di pescato.<br \/>\nDai pescatori locali il prodotto arriva con una freschezza e una qualit\u00e0 incomparabile: trota, persico, coregone, salmerino, luccio e lucioperca, ma anche anguilla e tinca. Uno dei piatti tipici \u00e8 il pesce in carpione, marinato in aceto e verdure e ottimo nelle calde giornate estive. Progetti pilota privati e pubblici, anche transfrontalieri, mirano a valorizzare il pesce di fiume e di lago, con l\u2019obiettivo di salvaguardare l\u2019attivit\u00e0 che i pescatori si tramandano di padre in figlio.<br \/>\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_separator color=&#8221;black&#8221; css=&#8221;.vc_custom_1597237105197{margin-top: 30px !important;margin-bottom: 60px !important;}&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text el_class=&#8221;francese&#8221;]Die Fische<br \/>\nEine Besonderheit des Kantons Tessin ist es, dass man auf wenig mehr als 100 Kilometern von den Gletschern in sonnenbeschienene Ebenen kommt und dass man sowohl zwischen Tannen, wie auch unter Palmen spazieren kann. Vor allem faszinieren einen aber die Bergb\u00e4che, die die bekannten Fl\u00fcsse und Seen mit Wasser versorgen. Und eben diese Seen und Fl\u00fcsse bieten, ausser Teil der sch\u00f6nen Tessiner Landschaft zu sein, ein ideales Zuhause f\u00fcr eine unglaubliche Vielfalt von Fischen. Diese waren in der Vergangenheit sehr bedeutend f\u00fcr die lokale Ern\u00e4hrung und Wirtschaft. Ein Kapital, das sich in den kulinarischen regionalen Traditionen widerspiegelt, die jede Form von \u201cGefischtem\u201c entsprechend w\u00fcrdigen. Von den lokalen Fischern kommen Produkte von einer unvergleichbaren Frische und Qualit\u00e4t: Forellen, Barsche, Felchen, Saiblinge, Hechte, Zander, aber auch Ale und Schleie. Eines der typischen Gerichte ist der \u201cPesce in carpione\u201c, mariniert mit Essig und Gem\u00fcse ist er ein optimales Gericht an heissen Sommertagen. Private und \u00f6ffentliche, auch grenz\u00fcbergreifende Pilotprojekte zielen darauf ab die Fische der Fl\u00fcsse und Seen wieder aufzuwerten. Ziel ist es, den Beruf des Fischers zu erhalten, der vom Vater auf den Sohn \u00fcbertragen wird.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_separator color=&#8221;black&#8221; css=&#8221;.vc_custom_1597237137203{margin-top: 30px !important;margin-bottom: 60px !important;}&#8221;][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text el_class=&#8221;tedesco&#8221;]Poissons<br \/>\nLa particularit\u00e9 du Canton du Tessin est le fait qu\u2019en un peu plus de 100 km l\u2019on va des glaciers aux plaines ensoleill\u00e9es, et l\u2019on peut tout aussi bien se balader parmi les sapins que sous les palmiers.<br \/>\nMais l\u2019on reste surtout fascin\u00e9 par les torrents alpins qui alimentent rivi\u00e8res et lacs c\u00e9l\u00e8bres. Justement, les lacs et les rivi\u00e8res, en plus d\u2019\u00eatre partie int\u00e9grante du paysage tessinois, sont l\u2019habitat id\u00e9al d\u2019une incroyable vari\u00e9t\u00e9 de poissons, par le pass\u00e9 essentiels pour l\u2019alimentation et l\u2019\u00e9conomie locale. Un patrimoine qui se retrouve dans la tradition culinaire<br \/>\nr\u00e9gionale, capable de mettre en valeur chaque type de poisson. Des p\u00eacheurs locaux, la marchandise arrive avec une fra\u00eecheur et une qualit\u00e9 incomparable; truite, perche, f\u00e9ra, omble-chevalier, sandre, brochet, mais aussi l\u2019anguille et la tanche. Un des plats typiques est le poisson \u201cIn carpione\u201d, marin\u00e9 dans le vinaigre avec des l\u00e9gumes, et parfait les chaudes journ\u00e9es estivales. As well as being a key feature in the Ticino landscape, these lakes and rivers provide the ideal habitat for an incredible variety of fish, essential to the local diet and economy in the past.<br \/>\nThis heritage is evident in the regional culinary tradition, which uses all types of fish.<br \/>\nTop quality fish is available fresh from the local fishermen: trout, perch, white fish, char, pike and zander, as well as eel and tench. A typical local dish is pesce in carpione, marinated in vinegar and vegetables and delicious on hot summer days.
